Food Tip Friday: Sweet Potatoes

Did you know that sweet potatoes are a healthier option compared to regular potatoes because they are packed with more nutrients! Below is one of my favorite ways to eat sweet potatoes–and with guacamole! It's a win!!
For the potatoes
3 medium sweet potatoes; cut in wedges
5 T Avocado Oil
For the Spice Mix
1 T Smoked Paprika
1 tsp Cinnamon
1/4 tsp Cayenne Pepper (can substitute with chili powder)
1/4 tsp Nutmeg
1/4 tsp Ground Ginger
1 tsp Cracked Black Pepper and Salt to taste
Preheat oven to 400F. Mix everything well in a big bowl, line a cookie sheet with parchment paper and spread sweet potato preferably in one layer. Bake for about 40 minutes until crispy. I prefer checking every 20 minutes to check if ready and turn over if necessary (depends on the type oven).
For extra crispy sweet potatoes, broil for a couple of minutes at the end.

1 small diced onion
2 tomatoes diced
2 gloves of garlic, minced
Juice of 1 lime
Salt and pepper to taste
Mix all the ingredients in a medium bowl and enjoy!
